This recipe will make approx. 5-7 waffles depending on your waffle maker and how much spillage you get while the waffles are cooking.
Ingredients
2 cups all purpose flour
2 Tablespoons sugar
1 teaspoon baking powder
3 large eggs separated
2 cups whole milk
1/3 cup vegetable oil
1 teaspoon vanilla extract
Directions
Blend all dry ingredients and take a whisk to blend them all together. I found there is no need to sift the flour doing it this way but if you prefer go ahead.
Add all wet ingredients except egg whites and mix until smooth
Beat eggs whites with a hand mixer until stiff peaks
Fold in egg whites
Use Pam spray or coat both sides of the waffle maker with oil (my preference) and pour the correct amount of batter based on your waffle maker
If you have the freezer space I will sometimes triple or quadruple this and make large batches of waffles and freeze them for my kids to enjoy. I do this since I do not like to clean the waffle maker. To freeze them let them cool after cooking and place 3 waffles in a freezer bag. To re-heat just take a frozen waffle out and place in an oven at 350 until ready.
